Scotmid’s Ratho Station store has launched the co-operative’s first ‘Food to Go’ provision, called ‘The Kitchen’. The move marks a change in strategy for the company and recognises the growing importance of food-to-go in the convenience space.
The Kitchen offers fresh food including porridge and salad pots through to hot meals and pizzas. Grab-and-go and made-to-order sandwiches are also available, as well as an evolving range of seasonal daily specials.
Scotmid’s research suggests that customers want a range of food available throughout the day, from breakfast through to evening meals. Stephen Brown, Scotmid’s Bakery and Local Sourcing Manager, said: “Most importantly, customers asked us to ensure they could get served and pay as quickly as possible and therefore we have installed a dedicated food-to-go section, distinct from the standard counter area.”
Ratho Station is the first of three trial stores opening over the next five weeks, which will be followed by the Carrick Knowe and Kingsknowe Scotmid co-operatives.
